NOUA, “new” in Romanian, is where modern Romanian cooking finds its voice. Alex Petricean, the chef who helped start the farm-to-table movement in Bucharest, looks back to old recipes, foraged plants and the produce of small farms, and turns them into tasting menus that feel both rooted and completely of the moment. The room is calm and intimate, the menu changes with the seasons, and the conversation about where each ingredient comes from is part of the evening. Book well ahead.
